Cilantro Lime Shrimp Skewers

There’s something special about gathering around the table after a busy day. Good food has a way of slowing us down, bringing us together, and turning ordinary evenings into cherished memories.
This week we're craving Cilantro Lime Chicken—a fresh, flavorful dinner that's perfect on the grill, over rice, tucked into tacos, or layered onto a salad.

🌿 What You'll Need
2 lb Shrimp
2 tbsp Lime Juice
1 1/2 cups Olive Oil
6 Cloves of Garlic Minced
2 Green Onions
1 Bushel of Cilantro Chopped
2 Jalapeño Peppers - 1 diced, 1 sliced
1 tsp Onion Powder
1 tsp Garlic Powder
1/2 tsp Ground Cayenne Pepper
1 tsp Chipotlé Chili Powder
1 tsp Salt
(Optional) A pinch of red pepper flakes for a little kick
👩🍳 How to Make It
Whisk together the cilantro, lime juice, olive oil, garlic, green onions, jalapenos, onion powder, garlic powder, cayenne pepper, chipotle chili pepper, sale, and optional red pepper flakes.
Pour over the shrimp and marinate for at least 30 minutes (2–4 hours is even better).
Skewer the shrimp - for added heat, put slices of jalapeños in between the shrimp.
Grill or bake until the shrimp reaches an internal temperature of 165°F.
Let it rest for 5 minutes before serving.

Grilled veggies
Black beans

Warm tortillas
